    Restaurant Kitchen Video Systems for Table Service

    restaurant kitchen display systemsKitchen Video Systems have been used in Quick Service restaurants for many years while Restaurant Kitchen Video Systems for Table Service restaurants have not been available and table service restaurants have relied on paper tickets from remote order printers. 

    Remote order printers work fine for getting the order to the appropriate make station in the kitchen, but the paper ticket system relies on an expediter or chef to control order timing.

    Here’s what has changed with Restaurant Kitchen Video Systems: the KVS has the preparation time for each menu item which includes plus or minus times for item modifiers.  The item modifiers compensate for the preparation time variances between a rare steak and a well done steak as an example.  That takes care of preparation time variations but what about the order timing?  The KVS unit looks at the items on each order and determines when each item should be sent to the make station video display.  Instead of relying on an expediter or the chef, the KVS controls the timing of all items and orders so the entire order meets at the pickup window simultaneously.

    Here is an example of how KVS would handle and order:  let’s order a well done steak, an order of pasta and a pizza.  The well done steak will take 9-minutes, the pasta dish will take 4-minutes and the pizza will take 16-minutes in our example.  The KVS will immediately send the item  with the longest preparation time to the appropriate station, in our example that would be the pizza.  Then 7-minutes later the KVS will send the steak to the grill make station and 5-minutes after sending the steak the KVS will send the pasta item to the entree make station so all items should arrive at the pickup window at the same time.

    The preparation stations only see the items they need to prepare at the time they need to start the order instead of seeing the entire order and relying on the expediter or chef to manually time and call out the individual items.  By automating the expediter function, with the Kitchen Video System, restaurants are able to reduce labor costs by utilizing an order assembly person to tray orders instead of an expediter to control timing and to tray orders.  The KVS can display digital menu cards for recipe viewing to enhance accuracy, efficiency and training while reducing clutter and printing costs.  Menu cards and recipes can be maintained remotely and updated electronically so all locations have the same data.
